Chicken Stir-fly

Prep and cook time : 1 to 2 hours
Serves: 4

Ingredients
2 x 5ml spoons brown sugar
4 x 15ml spoons soy sauce
5ml spoon cornflour
15ml spoon lemon juice
375g chicken breast, skinless, cut into 5cm strips
2 x 5ml spoons olive oil
2 stalks celery, cut into 5cm sticks
2 carrots, peeled and cut into 5cm sticks
1 red pepper, deseeded and cut into 5cm sticks
8 salad onions, cut into 5cm diagonals
175g bean sprouts

Method
Mix together the ingredients for the marinade.

Add the chicken strips, cover and refrigerate for 30 minutes.

Heat the oil in a wok or large pan and cook the celery and carrots for 2 minutes.

Add the chicken strips, marinade, red pepper, salad onions and bean sprouts and cook for 7 minutes.

Serve hot and while eating you can dream about your next 200 race.
