BANANA BOOST

An excellent, healthy energy boosting cake suitable for pre/post racing, easy to prepare (with an electric mixer!)

Ingredients
Eggs 1
Honey 2 tbsp

Self Raising Wholemeal flour 10 oz (275g)
Bananas 3
Sultanas 8 oz (225g)
Semi Skimmed Milk 1/2 pint (300ml)
Bicarbonate of soda 1 tsp
Butter/Margarine 4 oz (100g)

1. Grease and base line a 1kg cake/loaf tin
2. Blend flour, margarine, bicarbonate of soda and milk
3. Add the bananas, egg and honey
4. Stir in the sultanas
5. Spoon mixture into the tin
6. Bake at 180°C (350°F) Gas mark 4 for about an 1-1¼ hours depending on your oven!
7. Check after about 50 minutes
